About Fusion Ceylon
Working with world renowned chefs in top hatted restaurants has given me a passion for food that allows me to create tantalizing, authentic Sri Lankan dishes in an unorthodox way. Having grown up in Colombo and born in the south of Sri Lanka but keen to embrace the tastes of my life in Australia, I am always wanting to push beyond what is expected in order to present culinary and visual masterpieces. Having specialised in Culinary Arts as part of my hospitality training, I have been privileged to work for 15 years in well established five star restaurants across Melbourne such as The Stoke House, the Qantas First Class Lounge, and numerous Hilton, Sofitel, Intercontinental hotels, as well as the Park Hyatt.
Creating authentic Sri Lankan dishes infused with locally sourced produce is my passion. Having grown up in Colombo, Sri Lanka, where I learnt to cook in my mother’s kitchen at an early age, I have a love for the spice and colour associated with Sri Lankan cuisine. My passion for cooking started from my school at Royal College, Colombo where I prepared meals for the scout group that everybody loved. Determined to pursue my dream of opening my own restaurant, I moved to Australia to train under some of the world’s best chefs, including those at the Intercontinental Melbourne and the Park Hyatt Melbourne. In love with the taste and texture of Australian produce, I enjoy creating dishes that combine the taste of mixing Country Australian products with the fragrance of Sri Lanka. My aim is for my food to fill your belly and touch your heart.
